{"id":9106,"date":"2013-05-25T00:42:16","date_gmt":"2013-05-25T07:42:16","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=9106"},"modified":"2013-05-25T00:42:16","modified_gmt":"2013-05-25T07:42:16","slug":"recipe-celery-root-soup","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=9106","title":{"rendered":"Recipe &#8211; Celery Root Soup"},"content":{"rendered":"<p><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2013\/05\/soup.png\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft  wp-image-9108\" alt=\"soup\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2013\/05\/soup-150x150.png\" width=\"90\" height=\"90\" \/><\/a>Mrs. Burgerdogboy taught me to appreciate soup more than I had in this lifetime. \u00a0 She made some pretty good ones, but turned out, I am better at it than her. \u00a0She&#8217;s happy with a bowl of ramen or a can of Progresso, adorned with a couple of tablespoons of Tabasco; \u00a0I go more for complicated flavor layers made from scratch.<\/p>\n<p>Today&#8217;s brilliant concoction was a cream soup made from celery root and other vegetables.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>1 Celery root, peeled and diced<\/li>\n<li>2 C celery stalk, washed and diced<\/li>\n<li>1\/2 \u00a0Leek, diced<\/li>\n<li>3 cloves garlic, diced<\/li>\n<li>(Optional) \u00a0ham bone for smokey flavor<\/li>\n<li>2 T butter<\/li>\n<li>1\/4 C white wine<\/li>\n<li>1 qt chicken stock<\/li>\n<li>8 oz cream or half\/half<\/li>\n<li>Salt \/ pepper to taste<\/li>\n<li>Celery leaves for garnish<\/li>\n<\/ul>\n<p>Method:<\/p>\n<p>Place the vegetables (and optional pig part, I used a piece of hog neck) \u00a0in a large pot with the butter and wine, simmer until soft, approximately two hours. \u00a0Remove the vegetables from the pan and puree in a blender or food processor in batches, and return to pot, adding chicken stock and simmering for another thirty minutes.<\/p>\n<p>Minutes before serving, turn down the heat, and \u00a0lightly stir in the cream. Season to taste.
