{"id":6926,"date":"2012-01-29T11:38:10","date_gmt":"2012-01-29T19:38:10","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=6926"},"modified":"2012-01-29T11:38:10","modified_gmt":"2012-01-29T19:38:10","slug":"home-cookin-ulis-sausage-seattle-wa","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=6926","title":{"rendered":"Home Cookin&#8217; &#8211; Uli&#8217;s Sausage from Seattle, WA"},"content":{"rendered":"<p>Mrs. Burgerdogboy love getting our pork on for weekend breakfasts, and this can take many forms:\u00a0 bacon, ham chops, jowls, links, patties, smoked or fresh sausage.\u00a0 This weekend, we picked up some <a href=\"http:\/\/en.wikipedia.org\/wiki\/Lingui%C3%A7a\">linguica<\/a> from <a href=\"http:\/\/www.ulisfamoussausage.com\/\">Uli&#8217;s Sausage of Seattle<\/a>, being sold in the Portland area at <a href=\"http:\/\/burgersdogspizza.com\/2010\/12\/out-on-a-sausage-hunt-in-portland\/\">Sheridan Fruit Market<\/a>.<\/p>\n<p>Linguica (for those of you who didn&#8217;t click the link to wikipedia) is\u00a0 &#8220;Portuguese sausage&#8221; a smoked pork link seasoned with garlic and paprika.\u00a0 Outside of the Iberian peninsula, you&#8217;ll find it popular in Massachusetts, NJ, Washington and environs, and most of all, in Hawaii.\u00a0 Especially Hawaii, where you&#8217;ll find it even on the McDonald&#8217;s breakfast menu.<\/p>\n<p>Uli&#8217;s is a fresh sausage, that is, one has to cook it prior to consuming.\u00a0 I have a habit of parboiling fresh sausage before frying or grilling, a holdover from days in the Upper Midwest and they want locals treat <a href=\"http:\/\/en.wikipedia.org\/wiki\/Bratwurst\">bratwurst<\/a> sausages (parboiled in beer).<\/p>\n<p>Uli&#8217;s is a very fine grind, which I personally prefer (if you&#8217;ve ever ordered andouille in France, you&#8217;ll know what I mean).\u00a0 The flavors are strong, but I can&#8217;t identify them to you, as the label only lists (in addition to garlic, paprika and red wine), &#8220;spices&#8221; as an ingredient.<\/p>\n<p>After some discussion on the home front, and multiple tastes, we&#8217;re gonna guess that Uli has some finely ground fennel in the links, as well.<\/p>\n<p>It&#8217;s a great product.\u00a0 I&#8217;ll try others of his as I run across them.<\/p>\n<p><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2012\/01\/uli1.png\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter  wp-image-6931\" title=\"uli1\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2012\/01\/uli1.png\" alt=\"Uli's Sausage\" width=\"397\" height=\"371\" \/><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mrs. Burgerdogboy love getting our pork on for weekend breakfasts, and this can take many forms:\u00a0 bacon, ham chops, jowls, links, patties, smoked or fresh sausage.\u00a0 This weekend, we picked up some linguica from Uli&#8217;s Sausage of Seattle, being sold in the Portland area at Sheridan Fruit Market.
