after all, I had just received a new shipment of <a href=\"http:\/\/www.cincinnatifavorites.com\/skylinechili.php\">Skyline Chili <\/a>in the post, and I needed something to slather it on!<\/p>\n<p>Natural casing hot dogs are my favorite, but not America&#8217;s &#8211; less than 5% of the hot dogs sold in the US coming in casings (sheep intestines, usually).\u00a0\u00a0 People that prefer NC dogs like the &#8220;snap&#8221; one gets when biting in to the dog; an additional plus is the casing locks in flavor and juices.\u00a0 I enjoy both attributes of this type of wiener.<\/p>\n<p>Being as the masses like the skinless dogs, that&#8217;s what you&#8217;ll find in most groceries.\u00a0 I had to hit four stores before scoring my dogs the other day.\u00a0 Store # 3 usually has <a href=\"http:\/\/www.boarshead.com\/\">Boar&#8217;s Head<\/a> in the deli case, but they were out, so it was on to <a href=\"http:\/\/burgersdogspizza.com\/2010\/12\/sausage-update\/\">Sheridan Fruit Market<\/a>; Sheridan whips up about 30 different kind of sausages\u00a0on site\u00a0their meat counter, I figured franks would be among them.<\/p>\n<p>I figured wrong.\u00a0 But Sheridan also has a separate deli counter, featuring New Jersey&#8217;s <a href=\"http:\/\/www.thumanns.com\/index.html\">Thumann<\/a> line.\u00a0\u00a0 They had a pack of weenies just for me.\u00a0\u00a0 The Thumann&#8217;s natural casing beef wieners are a bit over-sized &#8211; six to a package, and retail for just north of $7, a bit spendy for a grocery dog.\u00a0\u00a0\u00a0 But you get what you pay for.<\/p>\n<p>And Thumann&#8217;s packs a punch of flavor.\u00a0 Most of America&#8217;s hot dogs are rather bland affairs, I&#8217;ve heard people describe them as &#8220;basically rolled up bologna,&#8221; but Thumann&#8217;s follows a more traditional &#8220;old world&#8221; recipe, and the delicate flavor of the combination of herbs and spices is quite evident, and enjoyable.\u00a0 The &#8220;snap&#8221; is great.<\/p>\n<p>Most hot dogs we purchase are pre-cooked, and thus require only reheating at home.\u00a0 Natural casing dogs require a &#8220;gentle&#8221; reheating, so as to not split the casing open during the cooking process.\u00a0\u00a0 You&#8217;ll hear many different methods of doing this, whether it&#8217;s boiling water, shutting it off, and letting the dogs take a hot water bath for five minutes;\u00a0 slow grill;\u00a0 simmer; steam.\u00a0\u00a0\u00a0 For today, I did low and slow in a skillet.<\/p>\n<p>I like the Skyline &#8220;chili&#8221;, and I have that word in quotes, because in a fair amount of the country, you&#8217;ll see a product like this referred to as &#8220;hot dog sauce.&#8221;\u00a0 The Midwest version is usually minced ground beef in a tomato-based sauce, with herbs and spices.\u00a0 Ohioans like some cinnamon in the mix.\u00a0\u00a0 In the Deep South, you&#8217;ll find onion-based sauces.<\/p>\n<p>I prefer the Midwestern style, as it was what I was first exposed to, at my all time favorite go-to dog place, <a href=\"http:\/\/burgersdogspizza.com\/2011\/03\/duluth-mn-original-coney-island\/\">Deluxe Coney Island <\/a>in Duluth.\u00a0 The Duluth version doesn&#8217;t include cinnamon, but today, in Portland, Oregon, at 330 AM in my kitchen, the Skyline Chili was just what the doctor (some doctor, somewhere, certainly not mine!) ordered!<\/p>\n<figure id=\"attachment_6906\" aria-describedby=\"caption-attachment-6906\" style=\"width: 358px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2012\/01\/thum1.png\"><img decoding=\"async\" loading=\"lazy\" class=\" wp-image-6906\" title=\"thum1\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2012\/01\/thum1.png\" alt=\"\" width=\"358\" height=\"305\" \/><\/a><figcaption id=\"caption-attachment-6906\" class=\"wp-caption-text\">Skyline Chili<\/figcaption><\/figure>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I had my cap set on some natural casing hot dogs the other day;
