{"id":4486,"date":"2010-11-18T09:36:37","date_gmt":"2010-11-18T17:36:37","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=4486"},"modified":"2010-11-18T09:36:37","modified_gmt":"2010-11-18T17:36:37","slug":"los-angeles-olio-pizzeria","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=4486","title":{"rendered":"Los Angeles &#8211; Olio Pizzeria"},"content":{"rendered":"<p><strong>Olio is a <a href=\"http:\/\/en.wiktionary.org\/wiki\/olio\">word <\/a>that has a number of meanings: \u00a0mixture, spanish stew, some other things. \u00a0But in the case of Bradford Kent&#8217;s &#8220;<a href=\"http:\/\/www.pizzeriaolio.com\/\">Olio<\/a>&#8220;, it just means Delicious, with a capital &#8220;D.&#8221;<\/strong><\/p>\n<p><strong>This newly opened, mid-city Los Angeles pie shop, the brainchild of Kent, a vet of all segments of the food industry, from research, to new product development, to selling pies in the L.A. Farmer&#8217;s Market.<\/strong><\/p>\n<p><strong>I was toted over there by Larry the Lawyer, my L.A. eating buddy for nearly 30 years. \u00a0We regularly hit the new spots when I am in town, and he&#8217;s been to Olio several times in their first month, and wanted to share it with me.<\/strong><\/p>\n<p><strong>The <a href=\"http:\/\/www.oftendining.com\/restaurant_info\/order.php?sid=5afb6042fa5368d70f373db463ec6f0d&amp;store_id=2085&amp;oid=1\">menu is brief<\/a>, but chock-a-block full of interesting and high quality toppings. \u00a0Kent discussed some of his &#8220;secrets&#8221; with us in between shuffling food out of the hotter than Death Valley wood-fired blast furnace in which he does his cooking. \u00a0&#8220;The secret is in my dough, but I&#8217;m not telling you the secret.&#8221; \u00a0 Kent uses Caputo, as most respectable pie-makers do these days. \u00a0C<a href=\"http:\/\/www.fornobravo.com\/store\/Caputo-Tipo-00-Flour-p-1-c-23.html\">aputo is the standard pizza flour in Italy, and you can buy it at gourmet shops or online, in one kilo (2.2 pounds) or 55 pound bags<\/a>.<\/strong><\/p>\n<p><strong>We wanted to &#8220;challenge&#8221; Kent, so starting with his basic Margherita, we dared him to use in-house ingredients to make an &#8220;all-meat&#8221; pie, which he admitted wasn&#8217;t one of his favorites, and would not appear on the menu. \u00a0 He had some prosciutto on hand, as well as his house-made chicken Italian, pulled manually in rough chunks, the way I prefer. \u00a0He added a mountain of a unique cheese blend, popped it in the blast furnace for 6-7 minutes, and out it came, perfect Neapolitan style, bubbly, crispy crust, goody cheese, and adorned with a variety of meat toppings just for us.<\/strong><\/p>\n<p><strong>If you love good pizza, you&#8217;ll REALLY love this, but order several to try his various creative combinations.<\/strong><\/p>\n<p><strong>Olio is open for breakfast, lunch and dinner, and also does smash-up catering events.<\/strong><\/p>\n<p><strong>We had the intent when we started the evening, to start at Olio and move across the street to check out Pat La Freda&#8217;s special meat at Burger Kitchen.<\/strong><\/p>\n<p><strong>But the pizza was so damned good, I didn&#8217;t want to cut in on the experience at all. \u00a0Burgers will have to wait for another day<\/strong>.<\/p>\n<figure id=\"attachment_4488\" aria-describedby=\"caption-attachment-4488\" style=\"width: 512px\" class=\"wp-caption aligncenter\"><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2010\/11\/oilo3png.png\"><img decoding=\"async\" loading=\"lazy\" class=\"size-full wp-image-4488 \" title=\"Olio Pizza Los Angeles\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2010\/11\/oilo3png.png\" alt=\"Olio Pizza Los Angeles\" width=\"512\" height=\"384\" \/><\/a><figcaption id=\"caption-attachment-4488\" class=\"wp-caption-text\">Olio Pizza Los Angeles<\/figcaption><\/figure>\n<p><a href=\"http:\/\/www.urbanspoon.com\/r\/5\/1553091\/restaurant\/Mid-City-West\/Olio-Pizzeria-LA\"><img decoding=\"async\" style=\"border: none;
