Some background:\u00a0\u00a0 Hearst Ranch is made up of thousands of acres of lush California grazing land surrounding <a href=\"http:\/\/www.hearstcastle.org\/\">San Simeon<\/a>, the former outpost for the late media mogul <a href=\"http:\/\/en.wikipedia.org\/wiki\/William_Randolph_Hearst\">William Randolph Hearst<\/a>.\u00a0\u00a0 He owned about 250,000 acres (that\u2019s nearly 400 square miles!) of California shoreline at one time.\u00a0\u00a0 Bordered by the Pacific Ocean on the west, and the coastal mountain range on the east, this temperate climate is Hearst\u2019s home \u2013 the largest single producer of all natural, grass fed, grass finished beef in the US.<\/strong><\/p>\n<p><strong><em>Interesting sidebar \u2013 the other side of this mountain range backs up against the US Army installation, Camp Roberts \u2013 where GI\u2019s during WW2 trained for invading Japan, lugging supplies on their backs, and with pack mules, up and down the mountains.<\/em><\/strong><\/p>\n<p><strong>What is flank steak?\u00a0 It\u2019s a cut of beef cut from the abdominal muscles of a cow.\u00a0\u00a0 It is so lean that unless properly prepared, it can be a might tough, though still wonderfully flavorful.\u00a0\u00a0\u00a0 Here in the US, we have most often seen it used\/sold\/served for the popular Mexican cuisine inspired dish, \u201cfajitas\u201d, but also sliced and rolled to be served as a London Broil \u201csteak.\u201d\u00a0 It is also commonly used by Chinese style restaurants as their cut of choice for stir fry preparations.<\/strong><\/p>\n<p><strong>The French are fond of flank steak, where it is called \u201cbavette\u201d and it is often served in cafes and bistros after being seared quickly with shallots in a hot skillet, and served rare.<\/strong><\/p>\n<p><strong>The Hearst Ranch people were kind enough to furnish me with two @20 ounce portions of the steaks, they came individually sealed, frozen, and accompanied by a small block of dry ice.\u00a0\u00a0 The retail cost for this package is $49, plus $19 for shipping.\u00a0 With approximately 44 pre-cooked ounces of meat in the package, that works out to $24 per pound, about what you would expect to pay in any high-end butcher shop.<br \/>\n<\/strong><\/p>\n<p><strong>Nearly all the recipes one can find for flank steak call for nearly the same preparations, a long marinade, followed by a short, high heat, cook.<\/strong><\/p>\n<p><strong>I chose a fairly standard marinade.\u00a0\u00a0 One could modify this easily to \u2018fajita seasoning\u2019, by adding herbs and spices as you prefer.<br \/>\n<\/strong><\/p>\n<ul>\n<li><strong>2 medium onions<\/strong><\/li>\n<li><strong>1 T butter<\/strong><\/li>\n<li><strong>2 T oil<\/strong><\/li>\n<li><strong>1 t lemon juice<\/strong><\/li>\n<li><strong>1 t salt<\/strong><\/li>\n<li><strong>\u00bd t black pepper<\/strong><\/li>\n<li><strong>2 cloves garlic<\/strong><\/li>\n<\/ul>\n<p><strong>Optional \u2013 a few drops of hot sauce<\/strong><\/p>\n<p><strong>Melt the butter in a skillet, slice the onions very thinly, and saut\u00e9 until they are clear.\u00a0\u00a0 Whisk in the other ingredients, and pour over your cut of beef, and cover it.\u00a0\u00a0 Marinades should be allowed to \u2018act\u2019 at least 4 hours, and overnight is even better.<\/strong><\/p>\n<p><strong>In today\u2019s test, I marinated for 10 hours.\u00a0\u00a0 Here\u2019s what the cut(s) looked like after marinating. <\/strong><\/p>\n<p><strong>In the past, when making fajitas, or preparing <a href=\"http:\/\/en.wikipedia.org\/wiki\/Carne_asada\">carne asada<\/a>, we have taken similar cuts of meat and seared them quickly on the grill, I decided to try three different means of cooking for this cut.\u00a0\u00a0 I broiled some as I would for fajitas.\u00a0 I rolled it into a roast, and cooked a piece of it in that manner, and after I rolled it, but before cooking, I sliced off one end in a 1 \u00bd cut, and cooked it flat, under the broiler, as a \u201cLondon broil\u201d type steak.<\/strong><\/p>\n<p><strong> <\/strong><\/p>\n<figure id=\"attachment_4188\" aria-describedby=\"caption-attachment-4188\" style=\"width: 300px\" class=\"wp-caption alignleft\"><strong><strong><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2010\/09\/hearst11.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"size-medium wp-image-4188\" title=\"Hearst Grass Fed Beef\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2010\/09\/hearst11-300x255.jpg\" alt=\"Hearst Grass Fed Beef\" width=\"300\" height=\"255\" \/><\/a><\/strong><\/strong><figcaption id=\"caption-attachment-4188\" class=\"wp-caption-text\">Hearst Flank Prepared as a Rolled Roast <\/figcaption><\/figure>\n<p><strong>The results among the three methods were not uneven.\u00a0 Spoiler alert, I have to say this is some of the most delicious home-cooked beef I can ever remember having.\u00a0\u00a0 While my prep was more than adequate, I imagine a better cook could make this have a melt-in-your-mouth beef experience.<\/strong><\/p>\n<p><strong>The \u201croast\u201d was cooked at 350 for 30 minutes.\u00a0\u00a0 The \u201ccarne cut\u201d, under the broiler, 3 minutes per side.\u00a0\u00a0 The \u201cLondon broil\u201d (looks like a prime filet, doesn\u2019t it?), 5 minutes per side under the broiler.\u00a0 (2<sup>nd<\/sup> shelf position).\u00a0\u00a0\u00a0 Both the roast and carne cut were cooked to medium rare at these times and temps, the \u201cLondon broil\u201d was bleu rare.\u00a0 The alledged online &#8220;experts&#8221; who talk about the toughness of this cut have never sampled Hearst&#8217;s beef.\u00a0 There is no way anyone could describe this meat as &#8220;tough.&#8221;<br \/>\n<\/strong><\/p>\n<p><strong>All were
