{"id":15331,"date":"2015-12-05T10:07:52","date_gmt":"2015-12-05T16:07:52","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=15331"},"modified":"2015-12-05T10:07:52","modified_gmt":"2015-12-05T16:07:52","slug":"appleton-farms-ham-review","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=15331","title":{"rendered":"Appleton Farms Ham Review"},"content":{"rendered":"<p style=\"text-align: left;\"><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2015\/12\/20151205_063709.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-medium wp-image-15333\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2015\/12\/20151205_063709-300x169.jpg\" alt=\"Appleton Farms Ham Review\" width=\"300\" height=\"169\" \/><\/a><a href=\"http:\/\/burgersdogspizza.com\/?s=Appleton+Farm&amp;search=Search\" target=\"_blank\" rel=\"noopener\">I&#8217;ve written about\u00a0Appleton Farms products before<\/a>; \u00a0it&#8217;s the in-house brand that Aldi has. \u00a0This is about their &#8220;Butt Portion Bone In Ham Water Added.&#8221; \u00a0To me, it&#8217;s significant that &#8220;water added&#8221; is part of the main product description, and in the ingredients you&#8217;ll find a host of &#8220;salts.&#8221; \u00a0Salt + water = brine = increased product weight = deterioration of meat muscle and texture.<\/p>\n<p style=\"text-align: left;\">At least to me. \u00a0Anytime I run into a brine injected muscle meat, the texture puts me off. \u00a0I&#8217;m sure it&#8217;s fine for the masses, tender, soft, but to me, it&#8217;s lost all connection to the animal flesh it started out as.<\/p>\n<p style=\"text-align: left;\">This ham is smoked and otherwise, the flavor is good. \u00a0I was able to &#8220;save it&#8221; a pleasurable experience for me by pan frying slices of the ham, removing most of the water. \u00a0Aldi contracts with <a href=\"http:\/\/gustopack.com\" target=\"_blank\" rel=\"noopener\">Gusto Packing<\/a>, outside of Chicago, to produce this ham. \u00a0Gusto also makes boneless hams and bacon on a contract basis. \u00a0The Gusto plant is pictured below.<\/p>\n<p>Gusto was purchased by Butterball a couple years back. \u00a0When searching for info on the company, I saw this story about one of Gusto&#8217;s \u00a0<a href=\"http:\/\/articles.chicagotribune.com\/2012-10-19\/news\/chi-kidnapper-of-meat-company-executive-gets-9-years-in-prison-20121019_1_prison-sentence-fifth-man-kane-county-prosecutors\" target=\"_blank\" rel=\"noopener\">executives getting kidnapped<\/a> a few years back.
