large;\"><b>Traveling in Eastern Europe, I became quite a fan of hearty soups, especially in Poland, where my one of my favorites became \u201cDill Pickle Soup.\u201d I was thinking about it the other day, and thought, \u201chey, why not, olive soup?\u201d So I gave it a try and it&#8217;s wonderful.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Ingredients <\/b><\/span><\/span><\/span><\/p>\n<ul>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>1 T <a href=\"https:\/\/www.greatolives.com\/buy-gourmet-olives\/index.php?route=product\/category&amp;path=39_57\" target=\"_blank\" rel=\"noopener\">Penna Crema Verde<\/a> Olive Spread<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>2 T <a href=\"https:\/\/www.greatolives.com\/buy-gourmet-olives\/index.php?route=product\/category&amp;path=39_57\" target=\"_blank\" rel=\"noopener\">Penna Crema Negra<\/a> Olive Spread<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>6 T\u00a0EVOO<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>1 C pitted, unstuffed, diced, \u00a0chopped olives (I used home brine cured fresh Penna greens)<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>\u00bd medium onion diced<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>2 cloves garlic, crushed<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>1 Qt chicken stock<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>1 C heavy cream<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>6 T flour<\/b><\/span><\/span><\/span><\/li>\n<li><span style=\"color: #636363;\"> <span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Seasonings to taste, salt, pepper, red pepper flakes<\/b><\/span><\/span><\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<figure id=\"attachment_13551\" style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Make a roux with 6 T flour and 3 T oil, cooked and stirred until it&#8217;s a dark paste.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Soak your diced olives in water for an hour to remove some of the salt, if desired.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Add 3 T oil, garlic, onion, and 2\/3rds of the olives to a skillet, saute while stirring until the onions are sweated.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Take the skillet contents, along with 1 C of stock and puree in your food processor.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Place mix with balance of stock in sauce pan, simmer for 15 minutes, add cream.\u00a0<\/b><\/span><\/span><\/span><\/p>\n<figure id=\"attachment_13550\" aria-describedby=\"caption-attachment-13550\" style=\"width: 150px\" id=\"caption-attachment-13550\" class=\"wp-caption-text\">Starting a Roux<\/figcaption><\/figure>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Continue to simmer while adding the roux, stirring constantly until the soup thickens.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Add seasoning to taste, and garnish with remaining chopped olives.<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>(OK, garnishing with chopped olives didn&#8217;t work \u2013 they sunk!) \u00a0This is a delicious soup on its own, but it might also be great if you use it as a base, adding rough chopped vegetables or salad shrimp!<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"color: #636363;\"><span style=\"font-family: Helvetica, Arial, sans-serif;\"><span style=\"font-size: large;\"><b>Dig in!<\/b><\/span><\/span><\/span><\/p>\n<figure id=\"attachment_13552\"
