{"id":12288,"date":"2014-09-30T08:01:05","date_gmt":"2014-09-30T15:01:05","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=12288"},"modified":"2014-09-30T08:01:05","modified_gmt":"2014-09-30T15:01:05","slug":"steak-tartare-side-adultery","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=12288","title":{"rendered":"Steak Tartare with a Side of Adultery"},"content":{"rendered":"<p><a href=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2014\/09\/tartar3.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-medium wp-image-12300\" src=\"http:\/\/burgersdogspizza.com\/wp-content\/uploads\/2014\/09\/tartar3-300x150.jpg\" alt=\"tartar3\" width=\"300\" height=\"150\" \/><\/a>I love steak tartare. \u00a0I like the ingredients and ritual of them gobbling it together table side for you. \u00a0Hard to find in the U.S. anymore, except at the occasional French bistro and I have scored it at the Pacific Northwest mini chain upmarket steakhouse, <a href=\"http:\/\/burgersdogspizza.com\/2013\/11\/el-gaucho-steakhouse-review\/\" target=\"_blank\" rel=\"noopener\">El Gaucho<\/a>. \u00a0My favorite place in the world to get it is at the <a href=\"http:\/\/fcchk.org\/about-club\" target=\"_blank\" rel=\"noopener\">Foreign Correspondent&#8217;s Club<\/a> in Hong Kong. \u00a0That might be partially due to the quality, but also to the mystique of the place, headquarters for journalists, spies, and various souls with nefarious intent.<\/p>\n<p>My second favorite place is here in Paris, where it&#8217;s pretty easy to find. \u00a0 I have mixed feelings when I come to Paris, \u00a0I lived here a couple decades ago, and it was a 50\/50 proposition, half of my stay was glorious and half was hell, kind of like my time in Portland, \u00a0Oregon. \u00a0In Paris, \u00a0I was partnered with a woman who couldn&#8217;t keep her pants on, which was great when she was home, not so great (for me) when she left the house. \u00a0Some people have &#8220;gay-dar,&#8221; \u00a0I&#8217;m cursed with having &#8220;cheat-dar,&#8221; \u00a0I have a knack for picking women who are serial adulterers. \u00a0But I&#8217;d have to define &#8220;serial,&#8221; wouldn&#8217;t I? \u00a0 Paris partner cheated three times in two years, Portland partner cheated on average, three times per week. \u00a0So I guess whatever term would be more severe than &#8220;serial&#8221; would apply to cheating partner #2. \u00a0Both still in their respective places, working their ways through the phone book. \u00a0 But enough of the fun stuff.<\/p>\n<p>Steak Tartare is raw ground steak, mixed with onions, caper, worcestershire, seasonings and egg yolk, served with little pieces of toast to schmear it on. \u00a0Incredible when prepared with great ingredients, I can imagine it could be terrible as well, tho I have never had a bad serving personally.<\/p>\n<p>In Paris you can get a version called\u00a0<i>tartare aller-retour, <\/i>which is mostly raw, but slightly seared on one side. \u00a0That&#8217;s good too. \u00a0&#8220;Cafe society&#8221; in \u00a0Paris is great. \u00a0Hardly anything, for me, is more enjoyable than sitting on the sidewalk at a bistro and whiling away the day with demi-tasses of espresso and chain smoking, reading the International Herald Tribune.
