{"id":12257,"date":"2014-09-24T04:34:11","date_gmt":"2014-09-24T11:34:11","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=12257"},"modified":"2014-09-24T04:34:11","modified_gmt":"2014-09-24T11:34:11","slug":"pork-roast-recipe-slow-cooker","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=12257","title":{"rendered":"Cuban Pork Roast Recipe"},"content":{"rendered":"<p>I had this girlfriend from Barcelona \u00a0who had many charms and talents, not the least of which was in the kitchen. \u00a0On occasion, she would make me a traditional dish, which I have long forgotten the name of &#8211; \u00a0it was cubed chunks of porks heavily encrusted with herbs. \u00a0 It was delicious, especially served with her family&#8217;s version of patatas bravas.<\/p>\n<p>(Funny, I&#8217;ve traveled all over the world, and nearly the best Spanish food \/ tapas I have ever had was at a joint in <a href=\"http:\/\/burgersdogspizza.com\/2010\/02\/amsterdam-nl-joselitos-tapas\/\" target=\"_blank\" rel=\"noopener\">Amsterdam<\/a>. \u00a0At least I think so. \u00a0Too much &#8220;coffee&#8221; prior to dinner may have influenced my opinion.)<em> \u00a0(Warning: \u00a0do not attempt to negotiate the stairs to the bathroom in that place if you aren&#8217;t 100% &#8220;right.&#8221;)<\/em><\/p>\n<p>Now that you know all that, this recipe is nothing like hers, but it&#8217;s good, nonetheless, and turns a quite ordinary event into a culinary masterpieces. \u00a0Spoiler alert? \u00a0It does take some advance planning.<\/p>\n<h2 style=\"text-align: center;\"><strong>Cuban Braised Pork Shoulder<\/strong><\/h2>\n<p style=\"text-align: left;\"><em><strong>Total preparation time 42 hours!!!!!<\/strong><\/em><\/p>\n<p style=\"text-align: left;\"><strong>Ingredients<\/strong><\/p>\n<p style=\"text-align: left;\">Crock pot<\/p>\n<p style=\"text-align: left;\">Electricity<\/p>\n<p style=\"text-align: left;\">3 pound pork shoulder or butt<\/p>\n<p style=\"text-align: left;\"><strong>Marinade<\/strong>:<\/p>\n<ul>\n<li style=\"text-align: left;\">1\/2 C fresh oregano<\/li>\n<li style=\"text-align: left;\">1\/4 C fresh parsley<\/li>\n<li>6 cloves garlic<\/li>\n<li>1 T black pepper<\/li>\n<li>1 \u00bd T sea salt<\/li>\n<li>2 T olive oil<\/li>\n<li>2 T white vinegar<\/li>\n<li>Red pepper flakes, to taste, is an option<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Using a mortar and pestle (or mini Cuisineart), grind the ingredients above together into a thick paste:<\/p>\n<p>Make a series of deep crosshatch -cuts into a 3 pound \u00a0pork roast (shoulder best, butt second choice) , and rub the paste well into the meat, covering as much of the surface as you can.<\/p>\n<p>Cover, refrigerate for 24 hours.<\/p>\n<p>Place in a crock pot with 2 more T of vinegar and cup of water.<\/p>\n<p>Cook on low, for 18 hours. Turn ONE time during cooking, otherwise <em><strong>leave that\u00a0F&amp;*((&amp;&amp; \u00a0lid on<\/strong><\/em>!<\/p>\n<p>Remove from pot, let rest on cutting board for 20 minutes.
