{"id":12021,"date":"2014-08-21T05:19:18","date_gmt":"2014-08-21T12:19:18","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=12021"},"modified":"2014-08-21T05:19:18","modified_gmt":"2014-08-21T12:19:18","slug":"pretzel-bun-review","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=12021","title":{"rendered":"Has the Pretzel Bun Jumped the Shark?"},"content":{"rendered":"<p>Has the phrase &#8220;jumped the shark&#8221; \u00a0jumped the shark?<\/p>\n<p>The origin of the &#8220;Pretzel Roll&#8221; in American restaurants seems to be traced back to the German &#8220;lye roll&#8221; or\u00a0<span style=\"color: #252525;\">\u00a0<\/span><i style=\"color: #252525;\">Laugengeb\u00e4ck. \u00a0<\/i>Using a process similar (and the same dough) \u00a0to making pretzels, the rolls are dipped in lye before baking. \u00a0The lye (washing or baking solution if you don&#8217;t want to handle lye) produces the unique browning effect. \u00a0Out of the oven, \u00a0the rolls (like pretzels) are dotted with large grains of salt.<\/p>\n<p>My first introduction to these buns going mainstream was the seasonal Oktoberfest burger at <a href=\"http:\/\/burgersdogspizza.com\/2011\/09\/nationwide-red-robin-octoberfest-burger\/\" target=\"_blank\" rel=\"noopener\">Red Robin<\/a>. \u00a0 <a href=\"http:\/\/burgersdogspizza.com\/2013\/09\/steak-n-shake-oktoberfest-burger-review\/\" target=\"_blank\" rel=\"noopener\">Steak N Shake<\/a> has offered one as well.<\/p>\n<p>Now they are widespread, available full time at Wendy&#8217;s, Sonic, and Smashburger, to name a few.<\/p>\n<p>Most grocery stores carry some variation of them, and there is even an upstart national brand out of Milwaukee, called <a href=\"http:\/\/www.pretzilla.com\/aboutus.html\" target=\"_blank\" rel=\"noopener\">Pretzilla<\/a>.<\/p>\n<p>The best ones, IMHO, are the ones found in authentic German bakeries. \u00a0I pick them up at the <a href=\"http:\/\/burgersdogspizza.com\/2009\/11\/house-made-burger-night\/\" target=\"_blank\" rel=\"noopener\">Original Bavarian Sausage Shop<\/a> in Tigard, OR, just down the street from one of Mrs. Burgerdogboy&#8217;s boyfriend&#8217;s house. \u00a0She should be mindful to bring some home when she&#8217;s over there!<\/p>\n<p>The German recipes are more appealing to me than the US fast food ones that seem to have added some sweetener to their recipes, honey?
