{"id":11367,"date":"2014-04-17T11:06:13","date_gmt":"2014-04-17T18:06:13","guid":{"rendered":"http:\/\/burgersdogspizza.com\/?p=11367"},"modified":"2014-04-17T11:06:13","modified_gmt":"2014-04-17T18:06:13","slug":"coney-island-recipe-hot-dog-sauce","status":"publish","type":"post","link":"http:\/\/www.peterstromquist.com\/?p=11367","title":{"rendered":"Coney Island Recipe &#8211; Hot Dog Sauce"},"content":{"rendered":"<p>I love coney island style hot dogs, which are not to be confused with chili dogs. \u00a0Coney islands follow a basic formula of a natural casing wiener, adorned with meat sauce, chopped raw onions, and yellow mustard. \u00a0There are variations of them around the midwest, usually at shops started by Greek families two or three generations ago. \u00a0Some of the more famous include<a href=\"http:\/\/burgersdogspizza.com\/2013\/08\/coney-island-style-hot-dog-introduced-world\/\" target=\"_blank\" rel=\"noopener\"> American Coney<\/a> in Detroit, <a href=\"http:\/\/burgersdogspizza.com\/2009\/06\/cincinnati-oh-gold-star-and-skyline\/\" target=\"_blank\" rel=\"noopener\">Skyline and Gold Star <\/a>in Ohio, and of course, <a href=\"http:\/\/burgersdogspizza.com\/2013\/08\/coney-island-style-hot-dog-introduced-world\/\" target=\"_blank\" rel=\"noopener\">Deluxe Coney<\/a> in my home town of Duluth.<\/p>\n<p>On occasion, I make my own sauce at home, whipping up a batch large enough to consume immediately, and freeze the rest in sandwich bags to take out whenever I have the urge over the succeeding couple of months.<\/p>\n<p>My recipe has been developed and fine tuned over many years, and is similar to the sauces listed above, but not identical. \u00a0Each establishment has their own &#8216;secret ingredient&#8217;, I am sure.<\/p>\n<p>Coney Island \u00a0Hot Dog Sauce Recipe<\/p>\n<p><strong>Ingredients for Sauce<\/strong>:<\/p>\n<ul>\n<li>6 C water<\/li>\n<li>1 6 oz can of tomato paste<\/li>\n<li>4 t chili powder<\/li>\n<li>1 t salt<\/li>\n<li>1 t allspice<\/li>\n<li>1 t garlic powder<\/li>\n<li>1 t cinnamon<\/li>\n<li>4 t cumin<\/li>\n<li>2 bay leaves<\/li>\n<li>2 \u00a0finely diced onions, one for broth, one for assembly later<\/li>\n<li>2 pounds 85\/15 ground beef<\/li>\n<li>High quality, natural casing hot dogs (I used <a href=\"https:\/\/www.stoneridgemarket.com\/specialty-meats\/natural-casing-wieners\/\" target=\"_blank\" rel=\"noopener\">StoneRidge<\/a> these days)<\/li>\n<li>Buns<\/li>\n<li>Yellow mustard<\/li>\n<\/ul>\n<p><strong>Method<\/strong>:<\/p>\n<p>Bring the water to a boil, and add and stir in the tomato paste. When thoroughly mixed, add the dry spices and herbs. Now here&#8217;s the twist, which is different that I usually would have done in the past, but it really works for this. Crumble the beef RAW into the broth, and the onions, and simmer for three hours or until reduced to a thickness that you prefer. You may have to further crumble the beef while cooking with a wooden spoon or potato masher, but chances are the hot water will do the job for you. \u00a0I usually end up cooking for considerably longer than three hours, reducing my concoction to a thick and meaty sauce. (An entire day sometimes).<\/p>\n<p><strong>Assembly<\/strong>:<\/p>\n<p>Steam or griddle fry your dogs, place one on a bun slathered with yellow mustard.
